2. What is the shelf life on Feta?
One year submerged in brine.
3. If cheese gets moldy, should I throw it away?
Mold may develop on the surface of cheese. Although most molds are harmless, to be safe, cut away 1/2 inch of cheese on all sides of the visible mold. Use remaining cheese as quickly as possible.
4. Can I make the Feta less salty?
Yes. Blend existing brine with 50% water and let it sit for two days.
5. Can you freeze Feta?
No. It denatures the protein and will cause it to fall apart.
